Fried rice is such a classic. Warming, nutritious and super quick, it's a great winter week night meal. It's also incredibly budget friendly, which I'm loving at the moment - it's been my go-to work lunch for the past week! The tofu and edamame beans are a great protein source, so it's a good one for keeping you full and satisfied.
Ingredients
1 red onion
3 tbsp sesame oil
3 spring onions
2 tsp turmeric
3 cloves garlic
One block of tofu (or veggie sausages chopped)
One stalk of broccoli (chopped into quite small pieces)
One cup of frozen peas
One cup of edamame beans
120 g baby spinach
1 red pepper
500 g cooked rice
2 tbsp soy sauce
Garlic chilli sauce
Method
Start by heating the sesame oil in a pan, before adding red and spring onions, garlic, turmeric and lots of salt and pepper.
Cook for a couple of minutes before adding the tofu and broccoli, mix well ensuring the tofu gets coated in the turmeric.
Depending on how crunchy you like the broccoli you may have to cook it for a while longer on a lower heat so it doesn't stick.
Once the broccoli is to your liking, add in the peas, edamame beans, red pepper, spinach, soy sauce and rice. Cook for another few minutes till everything is heated through.
Serve hot with with garlic chilli sauce drizzled on top - this is the best bit!
