I first made these for brunch with a friend after we'd been working out and we both totally fell in love - these are just heaven! With the oats and Greek yoghurt they're also a great morning protein hit and not entirely unhealthy (as far as choc chip pancakes go).
Ingredients
1 tablespoon maple syrup
1/2 tablespoon chia seeds
400ml of coconut or almond milk (any milk)
Handful of raspberries
50g oat flour (blended oats)
2 tablespoons of oil
100g choc chips
Method
Place all of the pancake ingredients into bowl and whisk well until a smooth batter has formed.
Leave to thicken up for 5-10 minutes.
Heat oil in a pan over medium heat.
Once warm, pour some of the mixture and leave to cook for 2-3 minutes.
Once the mixture has browned on the bottom, flip it over and cook on the other side for 3-4 minutes until cooked through.
Repeat until batter is used.
Top with greek yoghurt, nut butter, extra berries - get creative, whatever you like!
