Vegan Gingerbread Stars

These wee stars are always an absolute hit. I first made them around Christmas time with my friend to take into work and they didn't last very long at all! They're originally adapted from an Annabel Langbein recipe for gingerbread, but totally vegan if you make the chia jam. A festive and inclusive treat to be enjoyed year round.


Ingredients

For the stars

150g dairy free butter softened (or normal butter)

1/4 cup of soft brown sugar

3 tablespoons golden syrup

1 teaspoon baking soda

1 1/2 teaspoon boiling water

2 cups flour

3 teaspoons ground ginger

1 teaspoon cinnamon

1 teaspoon allspice

For the chia jam

300g frozen raspberries

4 tablespoons maple syrup

1 tablespoon chia seeds


Method
  1. Preheat the oven to 150˚C. Line 2-3 oven trays with baking paper.

  2. Beat together butter, sugar and golden syrup until pale and creamy.

  3. Mix the baking soda with the boiling water and add to the butter mixture along with flour, ginger, cinnamon and allspice. Stir to combine into a dough.

  4. Roll out the dough to roughly a 5mm thickness, using a little flour if necessary.

  5. Use two sizes of star cutters to make the 50/50 whole stars and stars with a cut out. If you only have one size of star cutter, you can do all stars without the cut out and just sandwich them together with jam anyway once they're cooked (or not at all if you'd prefer).

  6. Once the trays are full with your stars, put them in the oven for about 15 minutes or until golden. You'll want to take them out just before they look really ready, for them to be perfect once they harden.

  7. Whilst these are in the oven, you can quickly whip up the chia jam. In a pot on the stove, gently heat the raspberries and maple syrup together before adding the chia seeds. Stir for a couple of minutes before turning off the heat and letting this sit. You'll know it's ready when it's thickened. The chia seeds absorb the liquid and turn jelly like, thus avoiding the need to use gelatin.

  8. Once your biscuits are out of the oven and cooled down, you can start sandwiching them together with the chia jam. Finally, garnish them with a sprinkle of icing sugar.
