We made this in our flat for the first time just the other week as a side dish for some Chinese noodles and absolutely loved it. The combination of roasted nuts, olive oil and spices take a simple vegetable and really make it pop - 10/10 for easiness as well.
Ingredients
4 heads of bok choy
Fresh red chilli
1 clove of garlic (minced)
1/4 cup walnuts
1/4 cup almonds
1 tablespoon nutritional yeast (optional)
1 teaspoon paprika
Salt and pepper
Slosh of olive oil (maybe a couple)
2 tablespoons sesame seeds
Juice of half a lemon
Method
1. Roughly chop almonds and walnuts and mix them in a bowl with the nutritional yeast, garlic, salt and pepper, paprika, sesame seeds, lemon juice and a slosh of olive oil.
2. Lay nut mix out on a lined tray and roast for about 10 mins at 200°C until golden and crispy looking.
3. Meanwhile, slice the bok choy in half length ways and lay out on a lined baking tray. Drizzle with olive oil and season with salt and pepper before putting them in the oven for 10-15 mins. I used the bake setting, but that's because the grill on our oven is broken. I'd recommend using grill!
4. Once everything is grilled and roasted to your satisfaction, remove from the oven and sprinkle nut mix over top of the bok choy. Good to go as a side dish, or even the main event if you enjoy it as much as I do!
